To fix this, we’ve been putting infrared (IR) heaters inside stainless steel convection systems. Instead of waiting for the air to get hot, IR lamps beam energy directly onto the product. It’s instant. No waiting around. Getting your rhythm back The whole point here is to speed up your beat. When you add short-wave or medium-wave IR elements, you stop wasting time pre-heating huge volumes of air. These lamps hit their peak temperature in seconds. That means your batches spend less time sitting in the oven. If you’re pushing out high volumes, shaving just 30 seconds off a cycle can mean dozens of extra units every single hour. It adds up fast. The build matters We stick with stainless steel for the chassis. Why? Because IR lamps put out a massive amount of heat, and you don’t want your oven warping under the pressure. Plus, polished stainless is great for bouncing stray rays back toward the food or product. It keeps the heat where it belongs and stops you from wasting electricity. Just a heads-up: make sure your wiring and connectors can actually handle the wattage. You don’t want your terminals melting mid-shift. The catch (and how to handle it) Now, IR heating isn’t some magic wand. Because it hits so hard and so fast, it’s easy to scorch the outside before the middle is even warm. You have to find the sweet spot between the IR intensity and the convection airflow. If you just crank the power without moving the air, you’ll end up with nasty hotspots. We usually suggest a PID controller. It handles the power modulation for you, keeping the surface temperature right where it needs to be without you having to babysit the oven.
