
Getting Your Oven Temps Exactly Right
If you’ve ever tried high-end baking, you know that “steady heat” isn’t actually enough. To get that perfect crust and the right crumb, you have to hit specific temperature tiers—and you have to do it fast. That’s why we use short-wave infrared reheating elements. They let us flip the heat on and off in seconds. It gives you the kind of step-by-step temperature control that professional bread ovens actually need to work.
Why the speed matters
Most heating coils are just too bulky. They take forever to warm up, and once they’re hot, they stay hot long after you’ve cut the power. It’s frustrating. Our elements work differently. We use low-mass filaments to kill that lag time. When you tell the oven to heat, it heats. When you tell it to stop, it stops. You can keep your temperature in a very tight window without that annoying “overshoot” where the oven just keeps getting hotter than you wanted.
The trade-off: Power vs. Lifespan
To get this kind of snap, we use elements with high wattage density. It means the second you open the door or slide in a fresh batch of dough, the oven bounces back to its set point almost instantly. But here’s the catch: this speed comes at a cost. These elements take a beating. They’ll burn out faster than those slow, low-density coils. Because of that, we suggest a regular replacement schedule. It’s much better to swap them out on your own time than to have an element pop in the middle of a big batch.
Making it all work together
You can’t just plug these into any old system. You’ll need a high-speed SSR (Solid State Relay) or an SCR power controller. A standard mechanical contactor just can’t keep up with the constant switching—it’ll wear out way too fast. And one more thing: check your vents. Since these elements create rapid heat spikes, your airflow needs to be on point. If the air doesn’t move fast enough during a “stop” cycle, you might end up scorching the top of your bread, even though the power is technically off.
