
Stop Burning the Outside and Leaving the Middle Raw
We’ve all been there. You’re cooking a thick piece of meat, and you end up with that annoying result: a charred, dry crust on the outside while the center is still practically cold. It’s frustrating. To fix this, we stopped relying on just one way of heating. Instead, we combined stainless steel convection ovens with high-intensity Infrared (IR) heaters. By hitting the meat from two different angles at once, we can get the core to the right temperature without ruining the surface. How the heat actually works Here is the thing about standard convection: it uses air. But air is honestly a pretty terrible conductor of heat. If you just crank up the temperature to speed things up, you’re going to dry out the exterior before the middle even notices it’s in an oven. That’s where the IR comes in. IR radiation doesn’t need air to move; it just penetrates the meat directly. Short-wave IR handles the outer layers, while medium-wave IR digs deeper into the muscle fibers. Plus, we use forced convection to blow away that layer of steam that usually clings to the meat. Once that steam is gone, the IR energy can actually get inside. The “Secret Sauce” in the Controls We use stainless steel for the housing because it’s tough and easy to keep clean. But the real magic is in the control loop. To keep the meat from scorching, we use PID controllers linked to probes stuck right in the center of the meat. The system watches the temperature in real-time and adjusts the IR wattage on the fly. As soon as the surface hits a certain limit, the IR dials back. Then, the convection fans take over to gently “soak” that heat into the center. It’s a careful dance. A Word of Caution on Power Now, these high-wattage IR arrays pack a massive punch. They get you up to temperature incredibly fast, but they’re hungry for power. If your power source isn’t stable, you’ll see voltage drops. That means some parts of your oven will be hotter than others, which is a nightmare for consistency. You’ve got to make sure your wiring is beefy enough to handle the peak current of those lamps, or you’re just going to burn them out.
